French Lentils

I have been vegetarian since I was 10 years old, so I eat lots of lentils and beans. Here is my tried and true lentil recipe. It’s both cheap and easy to make- a bag of lentils is 99 cents and it only takes 30 minutes to make this dish!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 carrot, chopped
  • 3 cups vegetable broth
  • A little extra water, as needed
  • 1 cup French green lentils, rinsed
  • Salt and pepper

Instructions

  1. In a medium saucepan, heat olive oil over medium heat.
  2. Add onion and cook until softened, stirring frequently, about 5 minutes.
  3. Add carrot, broth, lentils, salt and pepper and bring to a boil.
  4. Simmer until lentils are tender, about 25 minutes.
  5. Adjust seasoning and serve.

**You may need to add water to the lentils as they are cooking, depending on how old the lentils are.

Sometimes I just eat it as is, or sometimes I eat it over rice or add a little extra vegetable broth and diced tomatoes to make it into soup.

Night Time Routine

BedtimeMy oldest son just turned 10 in December and he is almost taller then me! He’s going to graduate elementary school in June and go to middle school in the fall. He’s growing up so fast, where did my little boy go?

He is now becoming his own man. Man, I said it he’s becoming a man! He makes some of his own decisions. He choose his own hair cut with crazy designs on the side, decides whether to take his lunch instead of buying. Even though he is becoming a man, he still asks me to tuck him in every night. We sing a corny song, I tuck him in like a burrito, give him a kiss on the cheek and he goes right to sleep. We do this the same way every night and if I miss something or try to rush he asks me to start over and we laugh. I’m not sure how long he will ask me to tuck him in, but I’m hoping it’s until he goes to college!

Simple, Low Fat, 2-Ingredient Pancakes!!

I’m in love- with pancakes!! And these pancakes are even better – they have less then 100 calories and only 4 grams of fat!

PancakesHere’s the simple recipe:

Ingredients:

  • 1 large ripe banana
  • 2 eggs

Instructions:

  1. Blend banana and eggs in blender or mash with a spoon.
  2. Heat over medium heat until bubbles and then flip – just like regular pancakes.

This makes approximately 4 good size pancakes! I topped my pancakes with strawberries and sliced bananas and added a few chocolate chips to my sons’ pancakes.

Here are some additional tips:

  • If too thin, add more banana.
  • If too thick, add egg whites.
  • Cook on medium to low heat, or they burn fast.
  • You can add chopped nuts, blueberries or other toppings.
  • Top with peanut butter to add even more protein.

Homemade Laundry Soap

Recently, I’ve been switching all my store bought cleaners and soaps to more natural cleaners. I’ve starting making our laundry soap myself.  We have been using the same batch for 6 months now and I have enough to make another 2 batches. It’s great quality-  it even gets out baby food and baby smells! We have a top loading HE machine and its working great with this soap. Check out my recipe:

Homemade laundry soap

Laundry PowderIngredients:

  • Borax- stain removal and whitening- $3.00 – Walmart
  • Washing soda- odor removal – $2.49- Market Basket
  • Soap bar- degreasing – fel naphtha 99 cents -Market Basket

Instructions:

  1. Grate 1/2 the bar soap finely with a cheese grater
  2. Add 2 cups washing soda and 2 cups borax and the grated soap in to a bucket, put on the top and shake to mix.
  3. Add 1 teaspoon to each load, in the wash itself not in the detergent cup. For really dirty loads add 2teaspoons.

My laundry machine is in the basement, so I don’t worry about my sons getting down there but if your laundry is anywhere where kids go I would put it in a container with a child proof lid. I still use a dryer bar for fabric softner but when the bar runs out I will try and make my own fabric softner as well!

My Two Sons

My sons are 9 years apart. To many, this seems like we waited too long to have our second child. But for our family it has been perfect. The boys laugh and play together, run around together and love each other. The other day they were sleeping together on the bed and  my heart melted to see them hugging.

Brothers

My oldest was a big help through my very trying pregnancy. He was there after the baby was born, helping us by getting diapers or fixing bottles. He’s teaching his little brother about the world, he’s making him laugh and loving him.

They are two boys who will always have one another. No matter what happens to me or my husband, my sons have each other. That was why we decided to have another and it worked out perfectly. They are the best of friends!

Mock-aroni And Cheese

I LOVE mac and cheese but all the pasta and cheese doesn’t work well with my New Years resolution to lose weight! To make it a little healthier, I updated the recipe with veggies and low fat cheese. Try it out and let me know what you think!

Mock-aroni & Cheese

Ingredients

  • Mockaroni & Cheese1 head cauliflower or 16 oz. frozen cauliflower (or you can substitute broccoli)
  • 4 oz. fat free cream cheese
  • 2 Tbsp. fat free half and half (milk will work)
  • 8 oz. low fat shredded cheddar (divided)
  • 2 green onions, finely chopped
  • 1/4 salt
  • 1/2 tsp. pepper

Directions

  1. Cook the cauliflower until tender; drain well.
  2. In a 1 1/2 quart casserole, mix cream cheese, 4 oz. cheddar, and cream. Stir well until cream cheese is creamy and smooth.
  3. Stir in the green onions, salt and pepper. Add the cauliflower and gently fold into the cheese sauce to coat well. Adjust the seasonings if needed.
  4. Top with the remaining 4 ounces cheese and bake at 350º for 35 minutes, until bubbly and brown on top.

Makes 4-6 servings
Can be frozen

When Mom Is Sick

Is there ever a good time for a mom to be sick?

My SonRecently, I was sick for a week. I lay in bed curled in a ball first with the flu and then with an ear infection. Between dragging myself to work and other activities, I’m exhausted. It was the week before Christmas and all I could think of is what I needed to get done in addition to feeding both kids and changing the baby. Also, my youngest is 15 months;  he walks around all day long, screaming and finding things he shouldn’t and putting them in his mouth. It’s been a very trying week.

I’ve decided that I’m putting together a kit in case I get sick again. It will include all 3 types of Tylenol that we need, cold medicine, ginger ale, tea and other products for the flu or colds. This time, I had up drag the kids to CVS on a cold, rainy night to buy cold medicine.

Also needed when mom is sick are some microwave dinners or soup that bigger kids can make for themselves. That dreaded “Mom, what’s for dinner?” question isn’t fun when you are sick and don’t want to look at food, let alone smell it cooking.

I’m hoping we have had our share of being sick this winter and are done. But I’ve got a plan next time! Here’s to you and your family having a happy and healthy New Year!

What a Crazy Life We Lead!

We waited eight years to decide to be parents again, so our sons are nine years apart; one is almost 10 and one just turned 1. This past year has been crazy. Between taking care of the baby, running to soccer practice/games, fitting in doctors appointments, picking up the kids from school and cleaning up after everything, I feel like we never stop!

The one thing that has kept me sane is my morning (and sometimes evening) cup of coffee. As a working mom who is constantly on the move, my coffee is my two-minute escape from the madness! I enjoy every drop- even if I’m drinking it on my way to work or at the soccer field.

 

 

The best advice I could give any new moms out there is to find your two-minute break and something that makes you happy! Coffee, yoga, walking, reading a book or just shutting your eyes and sitting for two minutes are all great for your soul to rest!

Quick, Hide Everything! Houdini is Coming!

I thought I knew what I was in for when we decided to have another child. After all we had been through this 9 years earlier. But this baby is different, he’s a pint size Houdini.

At ONE he can open the dishwasher, open the lever on the door and likes to unplug everything. Leave crumbs or lint under the bed and he finds them. He totters around the house all day looking for things to destroy or eat. I recently locked the door and he went and got my husband’s keys and went to the door with the keys.

Luckily for me there are a ton of great baby proofing products, including power strip covers, appliance locks, toilet locks, door handles locks and the all-important gate!

My top priority is keeping my little Houdini safe from harm!! In my crusade to baby-proof my house, one website has answered a ton of my questions, from carseat safety to what plug covers work the best. Safekids.org is a great resource for any mom with a baby or a baby on the way!!!  And from now on, when someone has a baby I will bring baby proofing presents to their shower for them.

Accidents Happen

Being a mom is a very rewarding job! I get paid in hugs, laughs, and snuggles.

Recently, my son fell and scraped his head while in my care. I felt awful. How could this happen?? How could I let this happen??

Even though I knew he was fine, I took him to the ER to get his head checked. He’s doing fine now, but every time I looked at the cut I wanted to cry.

I learned a lot that day. I learned that accidents can happen to anyone- even to the best moms. Babies fall; they get bumps and scrapes, whether you are with them or not. I learned that no one is perfect. And, I learned that a kiss and a hug can help a child feel better after any injury.
